Your garden looks beautiful! And I'm always guilty of not thinning enough. It's always hard to know how much space is the right amount between seedlings. Hope your next crop of beets beat this first one!
Thanks Boaz! I am interested in planting more intensively (see: Huw Richards' YouTube channel), but I overdid it this time. It *might* be okay to sow rows closer together than what the seed packet says, since that spacing is, in part, intended to allow room to weed between rows. But I definitely sowed too closely within each row. We'll try again in mid-August for a fall harvest.
Is there anything as lovely as a salad made fresh from one's own garden? I like beet greens steamed but I guess you have to wait until the beets are fully grown for those. Your garden boxes look wonderful.
When I thinned the beets, I harvested the greens and used them in a pasta dish with shiitake mushrooms and sausage. They were indistinguishable from the kale or spinach I might have bought instead. I was glad to make use of them. Whether we'll ever see fully grown beets is anybody's guess, but at least I can use the greens.

Your lettuce looks great. I'm anxiously waiting for my first CSA box, delayed because their lettuce crop was destroyed by hail.
